Fresh fruits and vegetables are healthier than frozen, right? When researchers at University of California, Davis, studied frozen and fresh blueberries, broccoli, carrots, corn, green beans, peas, spinach, and strawberries, they found “no significant differences” between them, according to the author of the study, which was published in 2014. In fact, the frozen fruits and vegetables tended to have higher levels of vitamin E, while frozen corn, green beans, and blueberries had much higher levels of vitamin C. Frozen peas, carrots, and spinach did have lower levels of beta-carotene. (See here for more information on the study results.)
