Annual per capita consumption of dairy in the United States increased from 539 pounds in 1975 to 653 pounds in 2019, even amid a decline in per capita annual milk consumption from 247 pounds to 141 pounds during this period, according to the U.S. Department of Agriculture. The higher dairy consumption was driven by per capita consumption increases in yogurt (7 percent), cheese (19 percent), and butter (24 percent) in just the past decade.
